Peanut butter pancakes

These pancakes fill you up for hours. The recipe gives around 6 pancakes. To make them gluten free, simply substitute the flour with gluten free flour.

Ingredienser

  • 3 eggs
  • 2 tbs brown sugar
  • 2 tbs psyllium husk fiber
  • 2 tbs flour
  • 2 tbs shredded coconut
  • 2 tbs neutral oil
  • 2 tbs peanut butter
  • 2 dl milk
  • 1 ts vanilla extract
  • butter for frying

Instruksjoner

  1. Whisk eggs, sugar and psyllium husk fiber
  2. Add flour, shredded coconut, peanut butter and oil. Whisk until you have a dough-like mixture before you add the milk and the vanilla extract.
  3. Fry the pancakes with butter on medium heat. The mixture will be pretty thick, so you will need to spread it around the frying pan with a spoon.
  4. Serve with any topping you like! Fresh fruit, brown cheese, butter, peanut butter ......
