Green cashew salad

Perfect as a side dish for breakfast or lunch.

  • 75 g arugula
  • 50 g cashews
  • 0.25 lemon
  • 1 tbs olive oil
  • 0.33 ts salt
  • 0.33 ts black pepper
  • 0.5 dl shredded parmesan cheese


  1. Chop arugula and add to a medium sized bowl.
  2. Chop and roast cashews in a dry pan for a few minutes before adding them to the salad with the parmesan cheese.
  3. Squeeze the lemon over the salad and add the olive oil, salt and pepper.
  4. Mix well and serve! 🥗
