Green cashew salad
Perfect as a side dish for breakfast or lunch.

Ingredients
- 75 g arugula
- 50 g cashews
- 0.25 lemon
- 1 tbs olive oil
- 0.33 ts salt
- 0.33 ts black pepper
- 0.5 dl shredded parmesan cheese
Instructions
- Chop arugula and add to a medium sized bowl.
- Chop and roast cashews in a dry pan for a few minutes before adding them to the salad with the parmesan cheese.
- Squeeze the lemon over the salad and add the olive oil, salt and pepper.
- Mix well and serve! 🥗
